Meet Chef Eddie Montalvo
Born into a traditional Colombian family, Chef Eddie Montalvo's culinary journey began in his childhood, inspired by the nourishing dishes crafted by his mother, aunt, and grandmother.
After earning his Bachelor's Degree in Culinary Arts from Johnson & Wales University, he immersed himself in New York City's vibrant fine dining scene, working alongside culinary legends like Daniel Boulud and Jean-Georges Vongerichten.
Since joining The Break Hotel in the spring of 2026, Chef Montalvo has been instrumental in elevating our culinary offerings, bringing a unique blend of tradition and innovation to our kitchen.
